I made these as mini-gingerbread cupcakes for a gathering of friends and they were gone in a flash! Delicious!! I made half with the icing and half without. Loved them both! They were easy to make and had a really, really rich, flavor-packed taste. Several friends asked for the recipe. Best recipe I have tried in quite awhile. THANKS.

The cupcakes were delicious. I too am engaged in finals--I feel your pain-- and these were a perfect break. (Didn't love the icing though, sorry!).
