Another recipe from my mom's/grandma's kitchen. Always a pleaser and totally fatty due to all the dairy and butter, but who gives a shit when it tastes this good? A good way to get kids to eat their veggies I guess. I never got a pic because we just ate the damn thing to fast, but it's yumtastic so no worries.

What You'll Need...
2 lbs of broccoli, cut into 2 in. pieces
4 eggs, beaten
2 cups creamed/small curd cottage cheese
1 8oz can of whole kernel corn
1 cup shredded cheddar cheese
1/3 cup chopped green onions
dash of hot pepper sauce
salt and pepper
1/4 cup of butter
2/3 cup of seasoned bread crumbs
What You'll Do...
1) Place the broccoli in a greased 11x7x2'' dish.
2) Combine eggs and cottage cheese in a large bowl and mix well. Add drained corn, onion, cheddar, and pepper sauce. Salt and pepper to taste. Pour over the broccoli.
3) Melt butter in a saucepan or skillet and combine with bread crumbs/ Sprinkle over the top.
4) Bake for 325 degrees (F) for 45 minutes. Cool for 5 minutes before serving.
That sounds good! And I bet it would also be tasty as a quiche, served in a pie shell.
